    Beef of Coutancie: kesako ????
    "With similarities to the famous Kobe beef in Japan. The beef of Coutancie in the Périgord vert, is of exceptional quality. As in the past, this beef is raised in the grasslands until maturity and then "finished" on the farm. It is then fed only fodder and cereals, and drinks 3 liters of beer daily (to obtain a marbled meat) and receives special care: comfortably installed in a small box, it is massaged twice a day for 20 'so that the fat spreads harmoniously in the muscle. Rarity among rarities, this beef comes from a single farm, the Domaine de Coutancie, located in Saint-Priest-les-Fougeres.It is not a specific breed, since the animals intended for this label are either Limousines or Blondes d'Aquitaine, but of a precise mode of production and finishing of the oxen, sanctioned by a jury which grants or not the illustrious distinction. Like its Asian counterpart, Coutancie releases taste exquisite flavors, with a texture and juiciness unmatched. Although its scarcity reserves it to a small minority of initiates or amateurs, Coutancie beef is found throughout France in certain approved butchers *.
